Don't have any plans for tonight's meal yet? Don't worry, we have a delicious recipe for couscous with island flavors!
For two servings:
- 1 onion
- coconut oil for cooking
- 3 teaspoons of curry powder
- 1 can of canned tomatoes
- dried tomatoes
- 200 g of coconut milk
- a can of chickpeas
- 1 cup (about 100 g) of couscous
- salt and pepper
Cut the onions into small pieces and fry them in a pan. Add the curry to the onions and mix well. Add the canned tomatoes. If you want a more intense taste, add the dried tomatoes. Remove the water from the chickpeas and pour them into the pan. Simmer for 10 minutes over medium heat. Add coconut milk, pepper and salt. Simmer while stirring.
Meanwhile, bring a cup of water to a boil in a pan, then turn off the heat and pour in the couscous, cover and let stand for 5 minutes.
Serve the couscous with the curry mixture and add feta cheese, fresh tomatoes, coriander, etc. according to your taste.
